Baked Cinnamon Apple Chips and Peanut Butter Yogurt Dip

Weight loss surgery means a change in your lifestyle, including your diet. Once your doctor has cleared you to start eating solid foods, you’ll have some changes to make in the kinds of foods you eat to help keep you on track on your weight loss journey.

The best foods to eat following weight loss surgery are high in protein and low in fat and sugar. The Nicholson Clinic is devoted to helping our patients develop a healthy lifestyle post surgery. Here is a healthy option for a post-surgery snack.

Baked Cinnamon Apple Chips and Peanut Butter Yogurt Dip
Serving size: 1-2 apples and ¼ cup dip

Ingredients

Apple Chips:

  • 1-2 apples (Honeycrisp work well)
  • 1 tsp of cinnamon

Peanut Butter Yogurt Dip:

  • ½ cup creamy peanut butter
  • 1 ½ cups vanilla Greek yogurt
  • Pinch of ground cinnamon

Directions
Apple Chips:

  1. Preheat oven to 200 degrees.
  2. Using a sharp knife, slice apples thinly. Discard seeds.
  3. Arrange apple slices on baking sheet lined with parchment paper (do not overlap apple slices). Sprinkle cinnamon over apples
  4. Bake for 1 hour, then flip apple slices. Continue baking 1-2 hours, flipping occasionally, until the apples have become crispy and are no longer moist.
  5. Store in airtight container.

Peanut Butter Yogurt Dip:

  1. Combine all ingredients, stirring until thoroughly combined.
  2. Chill for 30-45 minutes before serving
